Plantains
Plantains look very similar to their sweeter banana
cousins, but they are much starchier in consistency and blander in taste.
They are usually cooked, but a very ripe plantain can be eaten raw.
As a plantain ripens, it changes color from green to yellow to black.
Unlike traditional bananas, the plantain is fully ripe and sweetest for eating
when the colour has changed to black.
They can be used in soups, stews, boiled and mashed.
